Host wants to record the participant only, both video and audio

When recording locally, the host can record all participants' audio streams as separate audio files, one file for each participant. To enable this option: Open the Zoom client and click Settings. Click the Recording tab.

My option to record audio separately has disappeared. This is the whole reason I am paying for Zoom, so I'm not happy.  Any ideas where I can find it?  It's not under Settings/Recording.
