Zoom triggers updates when joining or starting a call. There is an unnecessary delay in joining the meetings as a result of this. Would it be possible to trigger these updates while disconnecting from the call? You can also ask the user for their consent before triggering an update. possibly an option to postpone the upgrade a fixed number of times. like 1 or 2 hours, for a max of 3 times.

It is likely that the account owner of the meeting has enabled the “Require users to update the client” optional setting in Zoom and configured a required minimum version for their meetings. So, the decision to require participants to upgrade is likely coming from the owner of the meeting being joined. They (the account owner of the account which is hosting the meeting being joined) can disable this feature by following the steps in this article: https://support.zoom.us/hc/en-us/articles/360061238351-Requiring-users-to-update-Zoom
