Emmanuel Katto Uganda : How can I fix the extreme lag when sharing my screen on an iPad Pro?

This is typical of a poor Wifi/internet connection. Uganda is ranked 155 out of 182 countries for internet speed so it is one of the slowest in the world. Sharing the iPad via a desktop computer that is connected via ethernet will minimize the lag, but may still be significant because of the slow connection with the Zoom cloud.
