I created a Zoom meeting for 2 days from now and sent the invite out, and wanted to create Poll questions in advance. The only way I could see to do that was to start the meeting, create the polls then end the meeting for all. Will this have any effect on the time scheduled for the actual meeting because I started it and closed it?

No, starting the meeting before the scheduled start date/time will have no permanent effect on the scheduled start time/date. You will just start the meeting again on the scheduled date, as if you had never started it the first time.
If you are creating polls in advance, you don't need to start the meeting to do so. You can edit polls in advance through the web portal.
