I there any way to have both a document camera and an ipad connected to zoom at the same time please?

you can only use one camera at the time in your meeting there is now way in Zoom Client to use two cameras simultainiously. There are maybe other ways like using OBS Studio there you can connect two cameras on OBS Studion and route the OBS Video to the Zoom camera input.
You will find al lot of instruction out there in youtube.
