Conducting Interviews

We would like to conduct some interviews via Zoom.  We are thinking of setting up a single Zoom meeting for a 3-hour period. We would then tell each of the 5 interviewees a time to log into the meeting (one every half hour).  I am thinking if we use the Waiting Room function, we can monitor/control when the next interviewee can enter.  Does it make sense to do it this way, or do you recommend a different approach?  The interviewers will be the same for all 5 interviews. Only the interviewee will change. TIA.
