When I join a meeting that I was invited to it states "Recording in progress". Am I the one starting the recording? If so how do I turn it off? It will state the "recording in progress" no matter when I join. In my last meeting the host stated they thought it was me that was recording.

When you join a meeting and see “Recording in progress,” it just means the host (or someone the host gave recording permissions to) has started recording. Zoom shows that message to everyone who joins, to keep things transparent.
Unless the host made you a co-host or specifically gave you recording permissions, you’re not the one recording. If you're ever unsure, you can check the participant list- a little “REC” symbol will show up next to the name of the person who started the recording. This is what it would look like:
