If the meeting wasn't recorded and/or set-up to save chat, there isn't a way to retroactively gather the past chat history.

You can follow the steps in the link below to ensure future meetings are set to automatically save chat info. Keep in mind if you're not the host of the meeting, saving chat could be disabled for you as a participant.
