AirPlay screen sharing now taking a long time after upgrading to new M1 iMac

I recently upgraded to the new M1 iMac 24" with 16GB ram. Before this upgrade, I owned a late 2015 27" iMac with 8GB ram. Since upgrading, my AirPlay Screen Sharing to my iPad Pro is taking considerably longer. In fact, it usually takes around 16-20 ...
