I have a person I have extended an invitation to attend a recurring meeting who does not wish to join us. How do I remove that person from the recurring invitation?

I would guess that you invited them via your calendar system. To remove them from that calendar event, you would need to edit the guest list for that calendar event directly.
If that's not the case, we'd need to know more information about how you invited them to the recurring meeting.

I believe that is what he is asking how to edit the guest list. I am having the same issue.

After looking at it closely you have to be editing an upcoming meeting or duplicate it before the invite list becomes editable.

I was able to remove them from my Google Calendar. I couldn't figure out how to remove them in Zoom, which I wish Zoom would make it a simple process!!

If you only remove them from GCal they will still be able to access using the old link. What you can do instead is create a new recurring meeting link and send it to everyone minus the person you want to remove to ensure they can no longer access the meeting. To automate this you can use APIs to generate a new meeting link and send to everyone with a calendar invite thus ensuring removed participants no longer have access to the meeting. If you are not a developer there is a Zoom app, Salepager, that lets you renew the Zoom link. In effect you can remove an attendee and then with one click create a recurring meeting with the same occurrences and send a calendar invites to those invited automatically.
