how do I edit my meeting so that no participants can unmute

There are two steps you’ll likely want to take. First, you want all participants to be muted when they enter the meeting. This is done with a user setting:

If this setting is not enabled, you can set it for your meeting from the Participant window “more” (ellipsis) menu. 

 

Next, in the same location (Participant window “more” menu) you can disable the Allow participants to unmute themselves setting.
