I have a paid account. I make my assistant the host. I do understand that she cannot make herself a host but I have to sign in to make her the host every time. Is this correct that I have to initiate the hosting? Even though she sets up all my meetings for me and runs them?
Also, I have members who are either deaf or hard of hearing, and in settings, I say I need captions. When the meeting starts I click on enable transcription but then when I get the recording, there is no transcription and no captions for these folks. We SEE the captions while on the meeting but nothing on the recording. My assistant has tried this, I have tried this. What do I have to do to get captions on these meetings for them?

For the recording to save the captions as well, you need to ensure that the Cloud recording settings on the web have the Save closed caption as a VTT file option enabled. This article has more info: https://support.zoom.us/hc/en-us/articles/360060316092-Cloud-recording-settings

For the first part of your question - if your assistant is a licensed user on your Zoom account, then you can assign your assistant as an Alternative Host for your Meetings.
