If I schedule a 45 mins. ZOOM meeting at 2 pm (but open zoom at 1:30), am I "eating" 30 of my 45 minutes session?

The timer of Zoom session starts when you start the Zoom meeting.
If you are a paid user, you can host meetings without worrying about set times.
This means that a meeting set for 45 minutes can go on for more than 45 minutes.
